Chocolate mugs and mugs are a great way to get all your chocolate covered, but the best ones come with a bit of a challenge.
If you want to get a real mug cake on your Christmas eve, make your own.
You can use all sorts of flavours, and some mugs can even be made with a variety of flavours!
How to Make a Vanilla Mug Cake Ingredients: For the chocolate: 1½ cups chocolate chips, melted 3 tablespoons coconut oil, melted 2 tablespoons maple syrup ½ cup vanilla extract (I used my favourite vanilla extract) ½ cup icing sugar ½ cup cocoa powder 1 cup flour (1 teaspoon baking powder) 1 cup cocoa butter, melted 1 teaspoon baking soda ½ cup milk For the mugs: 1 cup of vanilla beans, crushed, or other beans (optional) For the icing: 2 tablespoons melted coconut oil 1 teaspoon vanilla extract 1 cup powdered sugar 1 cup icing cocoa powder For the buttercream icing: ½ cup powdered butter, beaten 1 tablespoon icing sugar 1 teaspoon cinnamon, ground 1 cup heavy whipping cream For the sugar: 3 tablespoons sugar, packed 1 cup water (for boiling) Instructions: Heat a microwave-safe dish over medium-high heat.
Add the melted chocolate chips and coconut oil to a microwave safe bowl, then add the melted coconut.
Stir until the melted melted chocolate melts and coats the sides of the bowl.
Stir in the melted vanilla and maple syrup, and continue to stir until the mixture is just combined.
Add in the vanilla extract and maple sugar, then stir until combined.
Heat the microwave-free dish on high for 10 seconds.
Heat a second microwave-proof dish, or use a non-stick pan, over medium heat.
Place the chocolate chips on top of the mixture, then place in the microwave on high-power for 20 seconds, stirring until chocolate is melted.
Then add in the powdered sugar, cocoa powder, and flour, stirring well.
Continue to stir for another minute or two, until the powdered mixture becomes a mousse-like consistency.
Pour the mixture into the molds, then microwave on HIGH for a minute or so.
It will take several batches, but it will come out very nice.
Serve immediately with a sprinkling of powdered sugar.
Notes: If you don’t have a microwave, you can use a tea kettle, or you can try using a coffee grinder to make your mugs.
This makes it easy to remove the chocolate when you’re done.
Also, the icing can be used to make mugs, or to add to mugs when you’ve added your favourite flavours to your mousse.
