Layer Cake is one of my favorite summer desserts, as it is super easy to whip up, and you can add lemon and spices to your layer cake.
If you want to make this Lemon Cake recipe a little different, you can also make it with whipped cream, whipped cream cheese, and honey, or you can even serve it over ice cream.
If the Lemon Cake is too heavy for your liking, you could also make a simple layer cake with strawberries or blueberries, or even add lemon slices and a drizzle of buttercream.
Layer cake recipe ingredients:1/2 cup coconut oil, melted2/3 cup powdered sugar1 1/2 teaspoons baking powder1 teaspoon cinnamon1/4 teaspoon salt1 cup cream cheese1 cup confectioners sugar1 teaspoon vanilla extract1 cup white cake flour (optional)1 cup milk (or other non-dairy milk)1/3 teaspoon baking soda1/8 teaspoon salt, or to taste1 cup lemon zest, juice, or puree1 cup powdered coconut milk, plus more for garnish1 cup butter, at room temperature1 teaspoon lemon juice1/16 cup sugar, for garnishes Directions: In a medium bowl, mix together the coconut oil and powdered sugar.
Add the powdered sugar and salt to taste.
In a large bowl, combine the cream cheese and confectioner’s sugar.
Beat until smooth.
Add milk and butter and beat again until well combined.
Add lemon juice, sugar, and vanilla and mix again until smooth, about 1 minute.
Pour into a small bowl.
In another medium bowl or mixing bowl, add the flour and the baking powder and mix until combined.
Beat again until combined, about 3 minutes.
Add salt and beat until combined (you may need to scrape down the sides of the bowl).
Add the lemon zests and the lemon juice and beat just until combined and smooth.
Pour the batter into the prepared cake pan.
Place on the parchment lined baking sheet.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and cool on a wire rack.
Let cool completely before frosting.
