What is a sams club cake?
A sams-club cake is a Japanese-style cake made of white rice cakes soaked in water, then topped with a sugary topping that includes fruit.
If you’ve never made one, the recipe below is pretty basic and simple.
I found the recipe to be relatively simple, but a bit tricky.
Instead of using the traditional rice flour recipe for a batter, I went for a non-dairy version of rice flour that I found at my local convenience store.
To make the batter, melt the water in a large saucepan over medium heat, add the sugar and whisk until it begins to foam.
Remove from the heat and let cool to room temperature.
Next, add in the rice flour mixture.
You can use the leftover rice flour to make a substitute for the rice batter, but I prefer the idea of using rice flour and using the water for the batter to keep the cake together.
Next add in eggs, milk, sugar and salt.
Mix until well combined.
Next, slowly add in flour mixture, whisking to combine.
When all the flour is combined, add your sams and mix well.
Add in the egg whites and whisk to incorporate.
Place the sams cake into a large cake tin.
Cover with foil and place in the freezer for at least one hour.
Then, slice the cake and serve with rice and fruit.
