Ingredients: 1½ cups coconut milk, at room temperature, plus more for icing 1 cup icing sugar, at Room temperature, for sprinkling (for mousse) ½ cup butter, at butter room temperature (or cold if you prefer) ½ teaspoon vanilla extract (optional) Directions: Preheat oven to 350 degrees F. In a large bowl, combine coconut milk and icing sugar.
Pour into prepared pan.
Spoon mixture into prepared mousse baking pan, alternating between the bottom and sides.
Bake for 18-22 minutes or until the mousse is firm and golden brown, turning occasionally.
